  • 2 x 200g pkts Arnott’s Tim Tam
  • 40g butter

Dark Chocolate Ganache


  • 350g dark chocolate, chopped
  • 200ml thickened cream
  • 30g butter
  • 3 dark chocolate Tim Tams, chopped, plus 5 extra to decorate

White Chocolate Ganache


  • 200g white chocolate, chopped
  • ¼ cup thickened cream
  • 5 white chocolate Tim Tams, to decorate

Preparation

Step 1
Grease a round 24cm x 4cm high fluted tart tin with removable base. Reserve 5 Tim Tam biscuits. Process remaining Tim Tam until crushed. 
Step 2
Add butter and process until combined. Press the mixture over the base and sides of the prepared tin. Place in the freezer for 15 mins to set.
Step 3
Meanwhile, for the dark chocolate ganache, combine the milk chocolate, cream, butter and sea salt in a microwave-safe bowl. Microwave on high, stirring every 30 seconds, for 1-2 mins, until melted and smooth. 
Step 4
Set aside for 5 mins to cool. Stir in chopped dark Tim Tams. Pour over the tart base. Place in the fridge for 2 hrs, until set.
Step 5
White chocolate ganache – place white chocolate and cream in a microwave safe bowl. Microwave on high for 30 second bursts, stirring until melted and smooth. Set aside to cool slightly. 
Step 6
Pour over the dark chocolate ganache and spread to the edges. Cut the remaining Tim Tam in half diagonally to make shards. Place gently into ganache. Chill for 15-20 mins until set. Transfer tart to a serving plate.

Notes

  • Add a pinch of salt to the dark chocolate ganache to enhance the flavour of the chocolate.
