Baking just became a whole lot easier with this easy No-Bake Scotch Finger Cheesecake. Made with just 4 ingredients and full of zesty flavour, Scotch Finger biscuits make the perfect buttery base for your next cheesecake.
Grease a 18cm x 28cm rectangular slice pan and line the base and sides with baking paper, extending paper 2cm above edge of pan.
Step 2
Lay 12 Arnott’s Scotch Finger biscuits down to make a base for the topping. Finely chop remaining 2 biscuits and set aside for garnish.
Step 3
Meanwhile, for the filling, beat together cream cheese, condensed milk, lemon zest and lemon juice. until well combined. Spoon mixture evenly over the base. Refrigerate for 4 hours or overnight.
Step 4
Serve cheesecake topped with remaining chopped biscuits.
