Ingredients

Mint Slice Cheesecake Base


  • 1 pkt Arnotts Mint Slice
  • 30g butter, melted

Cheesecake Filling


  • 250g cream cheese, softened
  • ¼ cup caster sugar
  • ¼ cup sour cream
  • 1 tbsp plain flour
  • 1 tsp vanilla extract
  • 1 egg
  • 24 Strawberries, trimmed
  • 24 Mini white marshmallows
  • Icing sugar, for dusting

Preparation

Step 1
Preheat oven to 140°C fan-forced. Lightly grease 2 x 12 hole mini silicone muffin pans.
Step 2
Process mint slice biscuits until fine crumbs. Add butter and process until combined. Spoon mixture evenly among holes. Flatten using a small glass or spoon. Refrigerate whilst making the filling.
Step 3
To make the cheesecake filling: Beat cream cheese using an electric mixer and sugar until smooth. Add sour cream, flour and vanilla until combined. Beat in egg until just incorporated. Divide mixture among holes. Bake for 10 minutes until set.
Step 4
Cool then chill until cold. Top with a strawberry and marshmallow. Dust with icing sugar.

Notes

  • Cut a small piece of the marshmallow off to help it stick to the hat.
