  • 200g Dark Tim Tam
  • 3 eggs
  • ½ cup caster sugar
  • ½ cup plain flour
  • ¼ cup cocoa
  • 1 tbsp boiling water

Cream Filling


  • 300ml thickened cream
  • 12 fresh cherries, pitted and chopped
  • 3 Dark Tim Tams chopped 

Preparation

Step 1
Pre heat oven to 200°C fan forced. Grease and line a 25 x 30cm swiss roll pan.  
Step 2
Use an electric mixer to whisk the eggs and sugar until mixture is thick, pale and doubled in size. 
Step 3
Sift the combined flour and cocoa powder over the egg mixture, pour boiling water down the side of the bowl. Use a metal spoon or balloon whisk to gently fold until almost combined.
Step 4
Pour into the prepared pan, gently smooth the surface. Bake in preheated oven for 10-12 min or until the surface is dry to touch. 
Step 5
Turn roll out onto a sheet of baking paper and roll into a log. Set aside to cool completely.
Step 6
The cream filling combines whipped cream with chopped cherries and chopped Tim Tam.
Step 7
Unroll the sponge onto a clean work surface and spread the cream mixture over the sponge. Roll back up and top with extra cream or Tim Tams.
